A series of cheese-making workshops

As part of a grass-roots initiative, between 17 and 25 September 2018, a series of 5 cheese workshops was organized in Bacówka, located in the former village of Caryńskie. The main purpose of the undertaking was to recall, maintain and disseminate the cultural heritage associated with Wallachian culture and cheese-making tradition, as well as to promote the region and support the tradition. The workshop consisted of a theoretical part in which the contractor discussed issues related to, among others with milk hygiene, assessment of milk as a raw material, milk composition, role of rennet in dairy production, he presented the most important issues related to cheese production in accordance with the traditions of the pastoral culture. Then there was a practical part during which participants could watch the work of juhas, observe animals in the natural environment and with the help of an expert make their own cheese by adding natural herbs to them also according to their own composition. A buffet was provided during the classes, during which various types of cheese could be tasted. After the workshops, each participant received a packet of cheese, which he could take home with him so that household members could taste these local dairy products.
